Ramazan Recipe: Light Pancakes


  • 1/3 cup water
  • 1/3 cup instant nonfat dry milk
  • 4 eggs (separated)
  • 1 cup cottage cheese (sieved) 1½ tsp
  • Salt 1/3 cup all-purpose flour (maida) (sifted)
  • 2 tbsp butter (makhan) or margarine
  • 1½ cup honey
  • 1¼ cup orange juice concentrated (frozen)


  1. Place water in a bowl, add nonfat dry milk and beat until mixture stands in soft peaks
  2. Add remaining ingredients except egg whites
  3. Beat egg whites until soft peaks form and fold into first mixture
  4. Pour butter, 2 Tbsp at a time, onto hot and greased griddle. Bake until it is golden brown. Flip and bake on other side
  5. For Sauce: Melt butter in small saucepan. Add honey and orange juice concentration. Heat until it gets warm.
